Beef and Mushroom Stroganoff
Ingredients:
- 1 lb. beef sirloin, sliced into thin strips
- 8 oz. sliced mushrooms
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp. tomato paste
- 1 cup beef broth
- 1/2 cup sour cream
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions:
- Preheat your air fryer to 400°F.
- Heat a little olive oil in a large skillet over medium-high heat. Add the beef strips and cook until browned on all sides, about 3-4 minutes. Remove the beef from the skillet and set aside.
- Add the sliced mushrooms, diced onion, and minced garlic to the skillet. Cook for about 5-6 minutes, until the vegetables are tender and lightly browned.
- Stir in the tomato paste and beef broth. Bring the mixture to a boil, then reduce the heat and simmer for about 10 minutes, until the sauce has thickened.
- Stir in the sour cream and chopped parsley. Return the beef to the skillet and stir to combine. Season with salt and pepper to taste.
- Transfer the beef and mushroom mixture to an air fryer-safe baking dish. Place the dish in the preheated air fryer and cook for 5-7 minutes, until the top is lightly browned and bubbly.
- Serve hot, garnished with additional fresh parsley if desired.
